A fine white powder made from beets and used as a sugar substitute. Isomalt is most often used in commercial production to make 'sugar-free' products because it contains roughly half the calories of white sugar. It is excellent for making sugar-free hard candies because it absorbs little water and creates a finish that is not sticky. This also makes Isomalt excellent for sugar decorations and pulled sugar work. Isomalt is also used as a preservative, extending the shelf life of baked goods.
