The kalamansi is likely a cross between tangerine and kumquat, hence its range of flavours. They are as sweet as lemon, as acidic as lime, as bitter as pink grapefruit, and with a hint of passion fruit.

It is excellent in smoothies, makes a refreshing lemonade-like drink, and can be used to flavour iced tea. Makes delicious fruit treats including sauces for plated desserts, ice creams, and sorbets, this purée is wonderful in filling for tarts, popsicles or paletas. Add it also to vinaigrette for salads or in salsa for with grilled fish.
