Lemon is a citrus, the fruit of the lemon tree, from the Rutaceae family. Originally from Kashmir, lemon spread to Persia. From the tenth century onwards, the Arabs brought it to the whole Mediterranean basin. Spaniards and Russians named it limon, which became lemon in English, while in France it was called "citron" taken from the Latin. The reputation of lemon is linked to its high vitamin C content, which has given it a wide range of medicinal properties.

Lemon purée makes delicious fruit treats including sauces for plated desserts, ice creams, and sorbets.
