Grown and hand-picked in India. Known for its superior flavour and colour, it is harvested green. Canes are used to knock the mangoes down from the its trees and they are left rested in straw, acting as a maturing chamber.
Mango purée can be used to make delicious fruit treats including sauces for plated desserts, ice creams, and sorbets. Great for fruit jellies and puddings such as mango mousse, it is also excellent in popsicles or paletas. This purée can also be a superb addition to vinaigrettes for grain salads such as Wehani rice with grilled chicken or Asian noodle, and vegetable salads.
Obtained with the edible parts of the fruit, then sieved and finely chopped, without concentration, Boiron's frozen fruit purées are made with 90% ripe fruit and 10% sugars.
