The word "ananas" (French for pineapple) comes from "nana" which means "fragrant" - in the language of the Guarani Indians of the Amazon Rainforest. Originally from Brazil, pineapple has been grown since the dawn of time in South America and the Caribbean. Until the nineteenth century, it was the exotic fruit most frequently grown in European greenhouses and a popular dish in high society.
Pineapple purée can be used to make delicious fresh tropical-flavoured fruit treats including sauces for plated desserts, ice creams, and sorbets. It is excellent in smoothies and tropical cocktails, and makes wonderful popsicles and paletas. Pineapple purée can also be added to vinaigrettes for salad such as seared scallops with greens.
Obtained with the edible parts of the fruit, then sieved and finely chopped, without concentration, Boiron's frozen fruit purées are made with 90% ripe fruit and 10% sugars.
