Ksenia Penkina is a young, passionate and experienced pastry artist based in Vancouver, Canada. Receiving her degree in Switzerland, she continued to develop her passion and knowledge for patisserie mainly focusing on the inside world of the dessert, understanding of the chemistry behind it, and a process of ingredient integration.

Ksenia’s famous mirror glazed cakes with multiple colors and effects has been taking over the internet, nominating her with a shiny title “Glazing Queen”. Since the beginning of her artistic pastry, she invented several glazing effects that became classics of glazing and used by pastry artists all around the world.

Ksenia comments: “People would know me for my glazing style and I am highly attentive to it. I must say, glazing is my favorite part. However, the most important part is the cake itself.”

In 2016 Ksenia was the first in the pastry industry to film an online class, gaining over 40,000 students in 5 years. Further, she published three recipe books and one theory guide “Great Glaze Doesn’t Start With Glaze”; traveled the world teaching hands on classes; released molds in collaboration with Sikilomart and Chocolate World; launched her signature line of Haute Food Colors; created a signature pastry perfume “Keep Glazed” in collaboration with Thoo, found in major perfume boutiques worldwide.

After her successful 5-year pastry career working on the personal brand, she finally founded and created PastryClass - The World's Best Online Pastry Classes. Featuring online classes by Cédric Grolet, Pierre Herme, Ramon Morató, Frank Haasnoot, Jordi Roca, Christophe Adam and more legendary chefs. Platform celebrated one year in June 2023 and continues changing online pastry education and bringing success to every student.

2017

  • Worldwide Online Class and Extensive Student Network communication.
  • International Hands On Master Class Instructor, in countries such as Spain, Portugal, Romania, United Arab Emirates, Qatar, Thailand, India, Mexico, and Russia.

2018

  • Continuous Hands On Master Classes at her headquarters in Vancouver, Canada.
  • Collaboration with Italy’s Silikomart and release of two signature silicone moulds GEMMA and Mini-GEMMA.
  • Launched signature brand of Haute [ōt] Food Colors, featuring a full range of both water soluble and oil soluble colors.
  • Launched Haute [ōt] Online Pastry Shop. Presenting Haute [ōt] Food Colors, premium & unique ingredients, cake silicone moulds, equipment for the professional and home kitchen.

2019

  • Released her first recipe book with Russian publisher, 3000 copies sold out in two days.
  • Launched high end Perfume “Keep Glazed” as a collaboration with Italian company Thoo House of Oud. Perfume & Dessert were created in mutual scent, flavour & design.
  • Collaboration with Belgium Chocolate World and release of signature CW1972 Polycarbonate Chocolate Mould, used by chocolatiers all around the globe.
  • Release of 18 x personalized GIFs for Instagram (Facebook & other) Stories & Messages, used worldwide & can be searched by "Penkina" and many other key words representing each GIF.
  • Release of Revolutional Online Master Course for Experienced & Professional Bakers.
  • Released her second, NEW Recipe Book "RECETTE", this time in English Language. Available Worldwide.
